Sweet Cornbread from Scratch
Remember the Hearty Slow Cooked Chili recipe I posted the other day? Well, I have the perfect Cornbread to go with it. There’s nothing quite like the smell of freshly baked homemade cornbread coming out of the oven. With its golden crust and soft, slightly crumbly center, sweet, moist, and just so delicious, and super easy to make. It pairs perfectly with hearty meals like chili, soups, and stews. It’s simple to make, uses basic pantry ingredients, and comes together in less than 30 minutes.

Whether you bake it in a cast iron skillet, baking dish, or muffin tin, cornbread is incredibly versatile. Serve it warm with a spoon of butter, drizzle it with honey, or enjoy it as the perfect side dish for family dinners.
I don’t think you will ever go back to the box mixes from the store, once you have tried out this cornbread recipe. I crumble up a piece of cornbread and spread it all over the top of my Chili soup and it is pure delight.

Ingredients You’ll Need:

- 4 large eggs yolks and whites separated
- 1 cup milk
- 1 teaspoon vanilla extract
- 3/4 cup salted butter, melted
- 1 cup cornmeal
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 Tbsp baking powder
- 1 tsp salt
Instructions:

- In a large bowl, beat the egg whites until stiff peaks form.

- In a separate bowl, combine egg yolks, milk, vanilla, and melted butter stir to combine.
- Mix the dry ingredients in a bowl: cornmeal, flour, sugar, baking powder, and salt and add to mixture. Stir until combined but do not over mix.


- Carefully fold the egg whites into the batter using a spatula.


- Pour the batter into the prepared baking dish or skillet.

- Bake for 25 to 30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.

- Let cool slightly before slicing into squares and enjoy!
