Preheat oven to 350F. Grease a 9X13-inch baking pan with butter and set aside.
In a large bowl, beat the egg whites until stiff peaks form.
In a separate bowl, combine egg yolks, milk, vanilla, and melted butter stir to combine.
Mix the dry ingredients in a bowl: cornmeal, flour, sugar, baking powder, and salt and add to mixture. Stir until combined but do not over mix.
Carefully fold the egg whites into the batter using a spatula.
Pour the batter into the prepared baking dish or skillet.
Bake for 25 to 30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
Let cool slightly before slicing into squares and enjoy!
