Ingredients
  

  • 4 large Eggs, yolks and whites separated
  • 1 Cup Milk
  • 1 tsp Vanilla extract
  • 3/4 Cup Salted butter, melted
  • 1 Cup Cornmeal
  • 2 Cups All-purpose flour
  • 1 1/2 Cups Granulated sugar
  • 1 Tbsp Baking powder
  • 1 tsp Salt

Method
 

  1. Preheat oven to 350F. Grease a 9X13-inch baking pan with butter and set aside.
  2. In a large bowl, beat the egg whites until stiff peaks form.
  3. In a separate bowl, combine egg yolks, milk, vanilla, and melted butter stir to combine.
  4. Mix the dry ingredients in a bowl: cornmeal, flour, sugar, baking powder, and salt and add to mixture. Stir until combined but do not over mix.
  5. Carefully fold the egg whites into the batter using a spatula.
  6. Pour the batter into the prepared baking dish or skillet.
  7. Bake for 25 to 30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
  8. Let cool slightly before slicing into squares and enjoy!
