These easy homemade chicken burrito bowls are everything you love about a burrito served in a bowl instead of wrapped in a tortilla. Yellow rice, seasoned chicken tenders, beans, corn, fresh vegetables and a tomato salsa is the perfect combination of a nice, hearty burrito bowl that is easy to prepare for lunch or dinner.

What I love most about this recipe is that it is gluten free and it’s very versatile. You can use chicken, beef, pork, or even keep it vegetarian with beans and grilled veggies or whatever you have in the fridge. It’s perfect to make ahead and store in Tupperware to easily grab and go for lunch during the week. If you decide to do that, store the dressing separately to keep the veggies fresh.

This homemade burrito bowl is inspired by popular restaurant-style bowls it is fresh, budget-friendly, and easy to make at home. My husband and I went out for lunch and I happened to order a burrito bowl. It was so delicious that I had to make one myself. So I threw everything into a bowl that I remembered from that dish and created my own version of chicken burrito bowls.

What You’ll Need:

  • 1 1/2 cups cooked rice (white or brown)
  • 10 chicken tenders, grilled
  • 1 can of black beans, drained and rinsed
  • 1 can of corn (fresh, canned, or frozen)
  • Cherry tomatoes, halved and seasoned with salt and pepper
  • purple red onions, diced and mixed with the cherry tomatoes
  • 1/2 cup of shredded cheese (gouda, cheddar or Mexican blend)
  • 1/2 cup of salsa
  • pickled red onions ( see Doener/Kebab with Pita Bread recipe)
  • cucumbers and green onions, chopped
  • fresh lettuce
  • ranch

Optional Toppings:

  • pickled jalapenos
  • guacamole
  • tortilla chips
  • hot sauce
  • fresh cilantro
  • sour cream or Greek yogurt

Instructions:

  • Cook the rice: Prepare your rice according to package instructions. For extra flavor, add chicken soup mix into the water instead of salt and a little bit of turmeric to get that nice yellow color.
  • Prepare the protein: In a bowl mix together the spices of 1 tsp of salt, pepper, garlic powder, onion powder, smoked paprika, dried parsley, and dried oregano. Rub the chicken tenders with that seasoning mixture and add 2 Tbsp of mayonnaise, and 1/2 lemon. Place the chicken tenders in an airfryer and bake for 15-20 minutes or until fully cooked through.
  • Assemble the bowls: Divide the rice between serving bowls, add the shredded cheese, cooked chicken tenders, corn, and black beans.
  • Add fresh toppings: Top with tomato salsa, avocado slices, salsa, pickled red onions, cucumbers, green onions, and crunchy lettuce.
  • Finish and serve: Drizzle with ranch, sprinkle with fresh cilantro and squeeze lime juice over the bowl before serving.

Variations:

  • Chicken Burrito Bowl – Use grilled or shredded chicken with taco seasoning.
  • Beef Burrito Bowl – Ground beef or steak add a rich flavor.
  • Vegetarian Burrito Bowl – Replace the meat with extra beans, roasted vegetables, or tofu.
  • Low-Carb Burrito Bowl – Swap rice for cauliflower rice.

Storage: Store leftovers ingredients separately in airtight containers in the refrigerator for up to 3 days. Reheat the rice, beans, and meat before assembling fresh bowls.
