Ingredients
  

  • 1 1/2 Cups Cooked rice (white or brown)
  • 1 Can Black beans, drained and rinsed
  • 1 Can Corn (fresh, canned, or frozen)
  • 2 Cups Cherry tomatoes, halved and seasoned with salt and pepper
  • 1/2 Cup Purple red onions, diced and mixed with the cherry tomatoes
  • 1/2 Cup Shredded cheese (gouda, cheddar or Mexican blend)
  • 1/2 Cup Salsa
  • 2 Tbsp Pickled red onions
  • 1 Cup Cucumbers and green onions, chopped
  • 1 Cup Fresh crunchy lettuce
  • Ranch
For the seasoned Chicken:
  • 10 Chicken tenders
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Dried oregano
  • 1 tsp Dried parsley
  • 2 Tbsp Mayonnaise
  • 1/2 Juice of a lemon
Optional Toppings:
  • Pickled Jalapenos
  • Guacamole
  • Tortilla chips
  • Hot sauce
  • Fresh cilantro
  • Sour cream or Greek yogurt

Method
 

Cook the Rice:
  1. Prepare your rice according to package instructions. For extra flavor, add chicken soup mix into the water instead of salt and a little bit of turmeric to get that nice yellow color.
Prepare the Protein:
  1. In a bowl mix together the spices of 1 tsp of salt, pepper, garlic powder, onion powder, smoked paprika, dried parsley, and dried oregano. Rub the chicken tenders with that seasoning mixture and add 2 Tbsp of mayonnaise, and 1/2 lemon. Place the chicken tenders in an airfryer and bake for 15-20 minutes or until fully cooked through.
Assemble the Bowls:
  1. Divide the rice between serving bowls, add the shredded cheese, cooked chicken tenders, corn, and black beans.
Add Fresh Toppings:
  1. Top with tomato salsa, avocado slices, salsa, pickled red onions, cucumbers, green onions, and crunchy lettuce.
Finish and Serve:

Variations:
