Ingredients
  

Apple Goat Cheese Salad
  • 6 Cups Mixed greens
  • 1 Cup Pomegranate seeds
  • 1 Cup Goat cheese crumbled
  • 1/3 Cup Salad toppers pumpkin seeds, candied pecans, toasted walnuts, dried cranberries
  • 1 Apple chopped
Maple Vinaigrette
  • 1/4 Cup Olive oil extra virgin
  • 2 Tbsp Apple cider vinegar
  • 1 Tbsp Real maple syrup
  • 2 tsp Dijon mustard
  • 1 small Garlic clove pressed or grated
  • 1/4 tsp Salt
  • 1/8 tsp Ground black pepper

Method
 

  1. Wash and dry the greens thoroughly to prevent a watery salad. Arrange it on a large platter or bowl.
  2. Slice the apples just before serving to keep them fresh and crisp.
  3. Top with salad toppers, pomegranate and goat cheese. Persimmon if in season.
  4. Make the dressing in a mason jar, combine all the ingredients and shake well until blended.
  5. Drizzle with dressing right before serving and gently toss or leave layered for presentation.

Notes

This salad pairs well with grilled chicken, salmon, or crusty bread for a complete meal. To make it dairy-free, replace goat cheese with avocado or a plant-based alternative.
