Ingredients
  

  • 1 lb Ground beef
  • 15 oz Corn, drained
  • 2 Cups Salsa
  • 4-5 Jalapenos, chopped
  • 15 oz Black beans, rinsed and drained
  • 2 Tbsp Taco seasoning mix
  • 1 1/2 Tbsp Ranch dressing seasoning
  • 3 Cups Beef broth
Optional for Toppings:
  • Sour cream
  • Shredded cheese
  • Fresh cilantro
  • Tortilla chips

Method
 

  1. Brown the Meat: In a large Dutch oven pot over medium heat, cook the ground beef until browned. Let it simmer for 10 minutes then drain excess grease.
  2. Add everything else: Add all remaining ingredients to the Dutch oven. Drained corn, rinsed and drained black beans, salsa, chopped jalapenos, beef broth, and season with 2 Tablespoons of taco seasoning and 1 1/2 Tablespoon of ranch seasoning.
  3. Simmer: Bring to a boil, then reduce heat and simmer covered for 20-30 minutes.
  4. Taste & Serve: Adjust seasoning, then scoop into a bowl and add your favorite toppings. Such as shredded cheese, sour cream, jalapenos, tortilla chips or cilantro.
