Turn on the oven: Preheat oven to 375F.
Prepare the filling: Peel, core, and dice the apples into small cubes and place them in a small bowl. Add 2 Tbsp of sugar and 1 tsp of cinnamon, toss to coat.
Prepare the pastry: Roll out the puff pastry slightly and cut into 6 equal squares.
Fill and fold: Spoon apple filling into the center of each square. Fold over into a triangle and press edges with a fork to seal.
Egg wash: Brush egg yolk over each turnover. Cut small slits on top to allow steam to escape.
Bake: Bake at 375F for 18-20 minutes or until golden brown and puffed.
Glaze: Mix powdered sugar with whipping cream and drizzle over slightly cooled turnovers. Enjoy!
