- Marinate the Chicken: In a large mixing bowl, add cubed chicken. Try to cut the chicken in equal size chunks to ensure they cook evenly. Add olive oil, lemon juice, and spices. Toss well to ensure the chicken is coated well. Marinate for 15 minutes to 4 hours covered with a plastic cling and place the bowl in the fridge.
- Assemble the Skewers: Thread the marinated chicken onto skewers. Lay them flat on a baking sheet.
- Make the Butter Sauce: Melt the butter in a sauce pan on low heat, add the minced garlic and let it simmer for 2 minutes. Set it aside.
- Add the Skewers to the Grill: Preheat the grill on medium/high to 400F. Add the skewers directly to the grates and cook for about 8-10 minutes turning often. Add the Parmesan and fresh parsley if desired or other fresh herbs of choice to the cooled garlic butter.
- Brush the Skewers: Let the skewers sit on the grill for about 2 minutes on each side, rotating and brushing with the garlic Parmesan butter. Once the chicken is golden and reaches 165F internally, take it off the grill.
- Rest and Serve: Let the chicken rest on a a baking sheet and brush generously with leftover garlic Parmesan butter and a squeeze of lemon before serving. Sprinkle extra Parmesan on top and serve warm. Enjoy!

Recipe Tips:
- For the best garlic parmesan chicken skewers, don't overcook the chicken! Be sure to check the internal temperature of the chicken it should not exceed 165F.
- If air frying the Skewers, you may need to cut the skewers in size to fit in the air fryer. You can also omit the skewers and just pop them into the air fryer. Set temp on 350F for 10-12 minutes. Brush them once or twice with butter throughout cooking.
- Bake chicken skewers in the oven on 350F on a rimmed baking sheet for about 15-18 minutes. Turning often.
