German Schoko Kirschkuchen (Chocolate Cherry Cake Thermomix version)

Ingredients
  

For the Dough:
  • 6 Medium Eggs
  • 250 g Sugar
  • 250 g Margarine, soft
  • 1 Package Vanilla sugar
  • 250 g All-purpose flour
  • 3 tsp Baking powder
  • 1 Glass jar Cherries, drained
For the Cream:
  • 250 g Cream cheese
  • 200 g Whipping cream
  • 200 g sour cream
  • 1 Package Vanilla sugar
  • 150 g Icing sugar
For the Chocolate Ganache:
  • 2 Tbsp Sour cream
  • 60 g Butter
  • 6 Tbsp Kakao powder
  • 8 Tbsp Sugar

Equipment

  • 1 Thermomix or
  • 1 Hand mixer
  • 1 Cooking pot

Method
 

For the Dough:
  1. Prepare a baking sheet with parchment paper. If you have a baking frame you can place it onto the tray, if not that's ok.
  2. In the Thermomix mixing bowl add eggs, sugar, margarine, and vanilla sugar. Mix 2 min/speed 5.
  3. Add the remaining ingredients, flour and baking powder. Mix 2 min/speed 6.
  4. Pour the batter onto a prepared baking tray.
  5. Drain the cherries from the glass jar and place the cherries onto the batter.
  6. Bake at 360F for 25-28 minutes. Or until golden brown.
For the Cream:
  1. In a Thermomix mixing bowl add cream cheese at room temperature, whipping cream, sour cream, vanilla sugar, and icing sugar. Mix 1 min/speed 5.
  2. Once the cake is done and cooled completely, spread the cream all over the cake.
For the Chocolate Ganache:
  1. In a Thermomix mixing bowl add sour cream, butter, baking kakao, and sugar. Mix for 15 min/100C/speed 2.
  2. Pour chocolate into a zip-bloc bag and drizzle over cooled cake.
  3. Remove the baking frame if you used one.
  4. Let the cake chill for at least 2 hours before serving. Enjoy!

Notes

If you don't own a Thermomix, you can simple use your hand mixer and stove top to make the chocolate ganache.
