Prepare the Pork: Preheat your oven to 400F (200C). Pat the pork tenderloin dry with paper towels.
Season: In a small bowl, combine onion powder, salt, pepper, smoked paprika, and dried oregano. Rub the pork with olive oil and coat evenly with the seasoning mixture.
Sear: Heat an oven-safe skillet over medium-high heat. Sear the pork tenderloin for 2-3 minutes on each side until browned.
Prepare the Soy Sauce Mixture: In a small bowl combine soy sauce and honey. Add minced clove of garlic and dried oregano.
Roast: Pour soy sauce mixture over seared pork tenderloin. Transfer the skillet to the oven and roast for 15-20 minutes, or until internal temperature reaches 145F (63C).
Rest: Remove the pork from the oven and let it rest for 5-10 minutes before slicing. Resting allows the juices to redistribute throughout the meat.
Serve: Slice into medallions and serve with your favorite side dishes.
