Loaded Baked Nachos are a crowd-pleasing appetizer or easy meal made with crispy tortilla chips layered with seasoned meat, melted cheese, beans, corn, and your favorite toppings. Baked until golden and bubbly, then finished with fresh ingredients like tomatoes, jalapenos, sour cream, salsa, red onions, bell peppers and guacamole. These nachos are perfect for game days, parties, or a fun family dinner.

Ingredients
  

  • 1 Large Bag Tortilla chips
  • 1 lb Lean ground beef
  • 2 Cups Shredded cheese (Gouda)
  • 1 Tomato, diced
  • 1 Jalapeno, sliced
  • 1/2 Red onion, finely diced
  • 1 Cup Black beans, drained and rinsed
  • 1 Cup Corn kernels
  • 1 Cup Red bell peppers, chopped
  • 1/2 Cup Fresh parsley, chopped
  • 2 Cups Salsa
  • 1/2 Cup Sour cream
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1 tsp Smoked paprika
  • 2 Tbsp Taco seasoning

Method
 

  1. Prepare the Meat: Preheat your oven to 400F (200C). In a large skillet over medium heat, cook the ground beef until browned. Then seasoned it with salt, black pepper, onion powder, garlic powder, and smoked paprika. Simmer for 10 minutes.
  2. Assemble the Nachos: Spread the tortilla chips on a large baking sheet or oven-safe platter. Top with seasoned beef and shredded cheese.
  3. Bake: Bake for 15-20 minutes or until the cheese is melted and bubbly.
  4. Add Fresh Toppings: Remove from the oven and immediately top with black beans, corn, diced tomatoes, red onion, jalapenos, bell peppers, and parsley. Serve with sour cream and salsa. Try out my favorite Guacamole recipe and pair it with cilantro, and lime wedges.
