This Thermomix Potato Sausage Soup is the perfect cozy meal for busy days. The Thermomix makes everything simple by chopping, sauteing, and simmering all in one bowl. It comes together within 30 minutes. If you don’t own a Thermomix, you can simply use this recipe and make it on the stove top. It is extremely easy to make.

This soup is loaded with hearty sausage, tender potatoes, and rich flavor, its filling, comforting, and perfect for the whole family. It’s a staple in our house, I make this soup on a weekly basis. I love to pair it with frozen cauliflower pizza, grilled cheese sandwiches, crusty bread, or warm homemade biscuits.

Ingredients You’ll Need for the Thermomix Potato Sausage Soup:

  • 1 medium onion (halved)
  • 1 clove garlic
  • 250g carrots (roughly chopped)
  • 125g diced bacon
  • 10g olive oil
  • 830g potatoes (bite-sized pieces)
  • 15g chicken soup mix
  • 1 bay leaf
  • 750g chicken stock
  • 320g Wiener sausages sliced
  • 1 tsp dried parsley
  • salt
  • pepper

Instructions:

  • Put the halved onion, garlic clove, and carrots into the mixing bowl and chop for 4 sec/speed 5.
  • Add the diced bacon and oil, then saute for 3 min/120C/speed 1 without measuring cup.
  • Add the potatoes, stir briefly, and cook again for 3 min/120C/speed 1 without measuring cup.
  • Add the chicken soup mix, chicken stock, and bay leaf, then cook for 20 min/100C/reverse/speed 1.
  • Add the Wiener sausages and cook for another 4 min/100C/reverse/speed 1.
  • Stir in the parsley and season with salt and pepper to taste.

Tips

  • Use Yukon Gold potatoes for a buttery texture.
  • For a spicy kick, use spicy sausages or add chili flakes.
  • If the soup becomes too thick, add a little extra broth

Storage:

  • Store leftovers in the refrigerator for up to 4 days in an airtight container.
  • Reheat gently in Thermomix at 90C/speed 1 until warmed through.
