Bechamel Sauce (Classic French White Sauce)
(With or without Thermomix version)
Bechamel Sauce is a smooth white sauce made by whisking warm milk into a butter and flour roux. It is a staple in my kitchen, I use it for countless dishes like lasagna, macaroni and cheese, pasta casserole, and over mashed potatoes or steamed veggies. My toddler can eat this sauce over noodles every single day and never gets tired of it. This creamy white sauce is made from just 3 simple ingredients – butter, flour, and milk.

The sauce has a mild, creamy flavor, which makes it perfect for absorbing additional seasonings like garlic, cheese, herbs, or spices. I love to add vegeta seasoning instead of salt and pepper. You can make it on the stovetop or Thermomix. I love to make the Bechamel sauce in my Thermomix as I can simple walk away without worrying to burn the butter or milk.

Ingredients You’ll Need:

- 40g butter
- 40g plain flour
- 500g milk
- 1/2 tsp vegeta seasoning or simply salt & pepper
Preparation:
- Place butter into mixing bowl and melt 3 min/100C/speed 1.

- Add flour and cook 3 min/100C/speed 1.

- Add milk, vegeta seasoning or salt & pepper and cook 6 min/90C/speed 4.


Stovetop Instructions:
- Melt the butter: In a medium saucepan, melt the butter over medium heat.
- Make the roux: Add the flour and whisk continuously for about 1-2 minutes. This cooks out the raw flour taste but keeps the roux light in color.
- Add the milk: Slowly pour in warm milk, while whisking constantly to prevent lumps.
- Cook until thick: Continue whisking for about 5-7 minutes until the sauce thickens and becomes smooth.
- Season: Add vegeta seasoning or simply salt & pepper.
Hints & Tips:
- Gluten free bechamel sauce: Substitute plain flour with cornflour or rice flour and proceed as per recipe.
- Quick version: Place all ingredients into mixing bowl and cook 7 min/90C/speed 4. The main version has a little more flavor but this faster version is great one-step substitute.
- When using the stovetop method: Use warm milk before adding it to the roux to prevent lumps.
- Too thick: If the sauce becomes too thick, add a little extra milk.
