Easy Homemade Lasagna Recipe (Cheesy, No Ricotta, Family Favorite)

This easy homemade, blubby, golden brown, gooey cheese, with ground meat lasagna that comes fresh out of the oven is a hearty, comforting dish that is layered with rich flavors that make every bite unforgettable. I have tried several lasagna’s before but I am not a big fan of the ricotta cheese and my husband can’t stand the taste of it, so I decided to create my own recipe version. Whether you’re cooking for a cozy family dinner or hosting guests, lasagna is one of those timeless dishes that always impresses. The preparation can be done in less than 30 minutes and let the oven do the rest. Learn how to make the best lasagna step-by-step.

Why You’ll Love This Recipe:

Homemade lasagna is the perfect balance of savory meat sauce, creamy cheese, and tender pasta. Unlike store bought versions, making it from scratch is alway the best, as you can adjust the seasoning to your liking. This recipe focuses on simple ingredients done right. Real wholesome flavors that come together beautifully in the oven.

  • A deeply flavorful meat sauce that is gently simmered. I love to use my homemade marinara sauce from the tomatoes from my garden but because we are currently into spring season, my winter stock is all gone.
  • Even layers of pasta that hold everything together.
  • Plenty of cheese for that golden, bubbly top.
  • No ricotta cheese filling if you don’t like the strong taste of it, instead I use cream of mushrooms and mix a lot of cheese with it.

Building the Perfect Layers:

I believe the secret to prevent lasagna from turning out dry is cooking the lasagna sheets for a few minutes separately, and letting them finish off in the oven. The oven ready lasagna sheets soak up too much of the sauce and I find that’s the reason some lasagna’s turn out dry and not as creamy and gooey.

Start with a base of sauce to prevent sticking, then layer your pasta sheets, meat sauce, cream of mushrooms and cheese. Repeat until your dish is full, finishing with a generous cheesy topping that will bake into a golden crust.

As it bakes, the layers meld together into one rich, delicious dish that’s as beautiful as it is tasty.

  • Bake to Perfection: Bake in a preheated oven at 400F for about 40-45 minutes covered, or until the top is golden and bubbling. Let it rest for 10-15 minutes before slicing – this helps the layers set beautifully.

What to Serve Lasagna With:

  • Serve your lasagna with a caesar salad and a slice of garlic bread, or fresh baguettes for the perfect meal. It’s also great for meal prep – lasagna tastes even better the next day!

Lasagna FAQs:

  • Can I freeze homemade lasagna? Yes, you can freeze it before or after baking. Let it cool completely, then wrap it tightly and store it in the freezer for up to 3 months. Simple let it thaw and bake it as per instructions if frozen unbaked.
  • How long does lasagna last in the fridge? Up to 3-4 days in an airtight container.
  • Should I cover lasagna with foil while baking? Yes, covering lasagna with foil helps it cook evenly and prevents the top from burning. Remove the foil near the end of baking so the cheese can brown nicely.
  • How do I know when lasagna is done? Lasagna is done when the edges are bubbling, the cheese on top is melted and slightly golden, and the center is hot. You can insert a knife into the middle – if it comes out hot, it’s ready.
