I love to make the caramel sauce for my famous mini caramel cheesecakes that I have posted the other day. It stores well it in an airtight jar in the refrigerator for up to 2 weeks. I once made 24 little jars of caramel sauce and used it as little presents for an Advents calendar that we did with 24 other girls. It’s great for gifting.

- 250g white sugar
- 200g heavy whipping cream
- 30g water
- 1 tsp lemon juice
- 30g unsalted butter, chilled and added into mixing bowl in 1 piece
Instructions:
- Place sugar, 70g of the cream, 30g of the water, lemon juice, and butter into mixing bowl and start Sugar Stages.
- Add remaining 130g cream and cook 5 min/100C/speed 2 without measuring cup.
- Pour into a sealable storage jar and set aside.
- Use caramel sauce as desired.
