I created this homemade fish soup and threw together the most simplest ingredients everyone has at home. It is perfect for chilly days, easy weeknight dinners, or whenever you want a wholesome meal that comes together very quickly you will be surprised.

  • 2 Tbsp of chicken soup mix (reduce to 1 tbsp if using chicken broth)
  • 1 Tbsp of cheez whiz melted cheese
  • 1 bay leaf
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 tsp smoked paprika
  • 1 tsp black pepper
  • 1 tsp salt

Step-by-Step Instructions:

  • Make the rice: Start by cooking the rice in a small pot according to package instructions. And set aside.
  • Saute the green onions: Melt the butter in a soup pot over medium heat. Add the chopped green onions and cook for about 3-4 minutes. Stir occasionally to prevent browning.
  • Add the Vegetables & Broth: Next, add the frozen mixed vegetables to the pot along with 4 cups of water or chicken broth for more flavor. Add 2 Tbsp of chicken soup mix. (Reduce to 1 tbsp if using chicken broth).
  • Add Seasonings: Season soup with salt, pepper, dried oregano, dried parsley, bay leaf, and cheez whiz melted cheese. Bring to a gentle boil, then reduce the heat and let it simmer for 5-10 minutes.
  • Season and add the fish: Season fish with smoked paprika, salt, pepper, dried oregano, and dried parsley. Cut into bite-size chunks and add to the pot. Let the soup simmer gently for 5-7 minutes. Fish cooks quickly, so avoid boiling the soup vigorously. When the fish is ready, it will easily flake with a fork.
