Make the rice: Start by cooking the rice in a small pot according to package instructions. And set aside.
Saute the green onions: Melt the butter in a soup pot over medium heat. Add the chopped green onions and cook for about 3-4 minutes. Stir occasionally to prevent browning.
Add the Vegetables & Broth: Next, add the frozen mixed vegetables to the pot along with 4 cups of water or chicken broth for more flavor. Add 2 Tbsp of chicken soup mix. (Reduce to 1 tbsp if using chicken broth).
Add Seasonings: Season soup with salt, pepper, dried oregano, dried parsley, bay leaf, and cheez whiz melted cheese. Bring to a gentle boil, then reduce the heat and let it simmer for 5-10 minutes.
Season and add the fish: Season fish with smoked paprika, salt, pepper, dried oregano, and dried parsley. Cut into bite-size chunks and add to the pot. Let the soup simmer gently for 5-7 minutes. Fish cooks quickly, so avoid boiling the soup vigorously. When the fish is ready, it will easily flake with a fork.
Add the rice to the soup: Taste the soup and adjust the seasoning with additional salt, pepper, or melted cheese. Add the cooked rice to the soup and serve with grilled cheese sandwiches.
