This hearty homemade fish soup is a comforting and nourishing dish made with tender pieces of fish simmered in a flavorful broth with vegetables, herbs, spices and rice. It's super simple with pantry ingredients everyone has at home. It's a satisfying meal that comes together very quickly, making it perfect for weeknight dinners or cozy family meals. This soup pairs wonderfully with crusty bread or grilled cheese sandwiches.

Method
 

  1. Make the rice: Start by cooking the rice in a small pot according to package instructions. And set aside.
  2. Saute the green onions: Melt the butter in a soup pot over medium heat. Add the chopped green onions and cook for about 3-4 minutes. Stir occasionally to prevent browning.
  3. Add the Vegetables & Broth: Next, add the frozen mixed vegetables to the pot along with 4 cups of water or chicken broth for more flavor. Add 2 Tbsp of chicken soup mix. (Reduce to 1 tbsp if using chicken broth).
  4. Add Seasonings: Season soup with salt, pepper, dried oregano, dried parsley, bay leaf, and cheez whiz melted cheese. Bring to a gentle boil, then reduce the heat and let it simmer for 5-10 minutes.
  5. Season and add the fish: Season fish with smoked paprika, salt, pepper, dried oregano, and dried parsley. Cut into bite-size chunks and add to the pot. Let the soup simmer gently for 5-7 minutes. Fish cooks quickly, so avoid boiling the soup vigorously. When the fish is ready, it will easily flake with a fork.
  6. Add the rice to the soup: Taste the soup and adjust the seasoning with additional salt, pepper, or melted cheese. Add the cooked rice to the soup and serve with grilled cheese sandwiches.
