(Juicy Grilled Pork Skewers)

You will love the marinade for this Russian Style Schaschlik recipe. After trying out multiple marinations I’ve came up with my very own version. Every time my husband barbecues the Schaschlik on the fire everyone is amazed how tender and juicy the meat is. Immediately people will ask me for the recipe.

If you love smoky grilled meat, Russian-style Schaschlik is a must try. This popular dish is a favorite at summer gatherings, backyard barbecues, and family celebrations across Russia and Eastern Europe.

I grew up eating Schaschlik and we loved to use the same marinate for different kinds of meat. You can use chicken, lamb or pork. My ultimate favorite is the pork, unlike many BBQ recipes, the secret to authentic Schaschlik is in the powerful marinade. Tender chunks of pork are marinated with onions, vinegar, spices, herbs and tomato juice, which helps break down the meat and infuse it with incredible flavor. When grilled over open flames, the meat becomes juicy on the inside with a delicious smoky crust on the outside.

What You’ll Need:

  • Pork shoulder/Butt
  • Onions
  • Tomatoes
  • Vinegar
  • Vegetable oil
  • Salt
  • Pepper
  • Smoked paprika
  • Sriracha
  • Fresh parsley
  • Bay leaves
  • Mix spices pouch (from Russian store- optional)
  • Tomato juice

Instructions:

  1. Prepare the Meat: Cut the pork into large cubes (about 1.5 – 2 inches). Larger pieces turn juicier during grilling.
  2. Make the Marinade: In 2 large bowls combine – sliced onions, one grated onion with its juices, pork cubes, vinegar, oil, salt, pepper, smoked paprika, sriracha, diced tomatoes, fresh parsley, bay leaves cut into small pieces. Massage the marinate into the meat and pour 1 can of tomato juice into each bowl. Making sure the sauce is covering the meat.
  3. Let marinate at least 24 hours in a colder room, but not in the fridge for maximum flavor and tenderness.
  4. Skewer the Meat: Thread the marinated pork pieces onto metal skewers and discard the rest of the juices and onions. Once the charcoal reaches high heat temperature, grill the skewers for 12-15 minutes turning constantly until the pork is beautifully browned and fully cooked.
  5. Serve: Remove from grill and serve immediately while hot and juicy.

  • 2-3 Tomatoes, diced with its juices
  • 2-3 Tbsp Vinegar
  • 2-3 Tbsp Vegetable oil

  • 2 Tbsp Black pepper
  • 2 Tbsp Smoked paprika
  • 2 Tbsp Sriracha hot sauce
  • 1 Bunch Fresh parsley, finely chopped
  • 3-4 Bay leaves, finley chopped
  • 1 Pouch Mixed schaschlik spices (optional)
  • 2 Cans Tomato juice
