Prepare the Meat:
- Cut the pork into large cubes (about 1.5 – 2 inches). Larger pieces turn juicier during grilling.
Make the Marinade:
- In 2 large bowls combine – sliced onions, one grated onion with its juices, pork cubes, vinegar, oil, salt, pepper, smoked paprika, sriracha, diced tomatoes, fresh parsley, bay leaves cut into small pieces. Massage the marinate into the meat and pour 1 can of tomato juice into each bowl. Making sure the sauce is covering the meat.
- Let marinate at least 24 hours in a colder room, but not in the fridge for maximum flavor and tenderness.
Skewer the Meat:
- Thread the marinated pork pieces onto metal skewers and discard the rest of the juices and onions. Once the charcoal reaches high heat temperature, grill the skewers for 12-15 minutes turning constantly until the pork is beautifully browned and fully cooked.
- Serve: Remove from grill and serve immediately while hot and juicy.
