Make the broth: Wash and dry the whole chicken, place it in a large pot and fill it 3/4 full of water over high heat. Periodically skimming off any foam that rises to the top. Season with salt, pepper, and chicken soup mix. Peel a medium onion and add it to the pot along with 1 bay leaf.
Cook the chicken: Bring to gentle boil/simmer and cook for 45 minutes.
Cook the noodles: In a separate pot cook the egg noodles according to package instructions until tender. It only takes 3 minutes to cook these fine noodles. Drain and add to the chicken pot.
Season and serve: Season to taste, serve hot and enjoy!
