Ingredients
  

For the Salad:
  • 1 Medium Napa cabbage, finely chopped
  • 2 Large Carrots, grated
  • 1 Red bell pepper, finely diced
For the Dressing:
  • 200 g Vegetable oil
  • 200 g White vinegar
  • 150 g White sugar
  • 1 tsp Salt adjust to taste
  • 1 tsp Black pepper

Method
 

  1. Prepare the vegetables: Finely chop the Napa cabbage into small pieces or use the Thermomix chop bottom. Grate the carrots and dice the red bell pepper.
  2. Combine all vegetables in a large mixing bowl.
  3. Prepare the Dressing: In a small saucepan whisk together the oil, vinegar, sugar, salt and pepper until the sugar is dissolved.
  4. Combine everything together: Pour the dressing over the vegetables and toss well until evenly coated.
  5. Rest: Cover and refrigerate for at least 2-4 hours, or overnight for the best flavor.
  6. Serve: Toss again before serving and enjoy chilled.
