Homemade Lemon Curd – A Bright and Tangy Citrus Spread
Lemon Curd is a silky, smooth citrus spread bursting with fresh lemon flavor. If you are in the process of making my Lemon Curd Cheesecake, this is the lemon curd I made in my Thermomix. It is made with simple ingredients like lemons, eggs, sugar, and butter, this classic treat is perfect for its balance of sweetness and tartness.

Lemon curd is originated from England it has been a popular accompaniment to afternoon tea, often served with freshly baked scones and clotted cream.

Ingredients You’ll Need for the Lemon Curd:
- Fresh lemon juice
- Lemon zest
- Granulated sugar
- Eggs
- Unsalted butter

How to Make Lemon Curd in the Thermomix:
- Place sugar and lemon peel in mixing bowl of the Thermomix then grind 20 sec/speed 10. Scrape down sides of mixing bowl with spatula.
- Add eggs, butter and lemon juice then mix 10 sec/speed 6. Scrape down sides and lid of mixing bowl with spatula then cook 4 min/80C/speed 4. Check curd has thickened if not, prolong cooking time by 1-2 minutes. Transfer to a warm glass jar with airtight lid. Close immediately and leave to cool before placing in the fridge. Serve chilled.
How to Make Lemon Curd on the Stovetop:
- Combine Ingredients: In a saucepan, whisk together the lemon juice, lemon zest, sugar, and eggs until smooth.
- Cook Gently: Place the saucepan over medium-low heat and cook while stirring constantly. The mixture will gradually thicken as it heats.
- Add Butter: Once the curd coats the back of a spoon, remove it from the heat and whisk in the butter until completely melted and incorporated.
- Chill: Transfer the lemon curd to a clean jar or container and allow it to cool befroe refrigerating.

- Used as a cake filling
