This Cheesy Broccoli Casserole is incredibly easy to make with hearty potatoes, broccoli, cauliflower, carrots, and crispy bacon topped with cheese and a white creamy sauce. This comforting dish is a favorite for family dinners, potlucks, holiday gatherings, and weeknight meals. Even picky eaters find it hard to resist the rich, cheesy goodness packed into every bite.

The tender vegetables and gooey melted cheese brings this dish together. I love to serve the broccoli casserole with chicken drumsticks or pork tenderloins. Any protein works well.

Ingredients You’ll Need for the Cheesy Broccoli Casserole:

  • 1 head of fresh broccoli, cut into bite-sized florets
  • 1 head of cauliflower, cut into bite-sized pieces
  • 2 carrots, peeled and cut into thin slices
  • 5-6 small potatoes, boiled with skin on, then cut into cubes
  • Bacon 5-6 strips, cut into small pieces and fried in a frying pan
  • 1 1/2 cups of heavy whipping cream
  • 1 Tbsp Kraft cheez whiz melted cheese
  • 1 tsp vegeta seasoning mix

Instructions:

  • Prepare the Vegetables: Boil 5-6 small potatoes with skin on until easily pierced through with a fork. Drain, and set aside.
  • Cut broccoli, cauliflower, and carrots into bite sized pieces. Steam or blanch until slightly tender. I just my Thermomix for that 10-15 min/veroma/speed 2.
  • Make the Cheese Mixture: In a small mixing bowl, combine the whipping cream, melted cheese, and vegeta seasoning mix. Add shredded cheese and set aside.
  • Assemble the Casserole: Cut potatoes in bite sized pieces, leaving the skin on and place it into a 8X8 inch baking dish. Season with a little bit of vegeta seasoning.
  • Add remaining steamed vegetables, and pour the cheese mixture over it.
  • Sprinkle shredded cheese over the casserole.
  • Bake: Bake uncovered for 25-30 minutes, or until hot and bubbly and the topping is golden brown.
  • Brown the Bacon: In a frying pan brown the bacon until crispy.
  • Serve: Add bacon pieces to the casserole. Allow the casserole to rest for 5 minutes before serving. Enjoy warm alongside your favorite main dishes and proteins.
