Trubaschkis – Crispy Cream Filled Pastry Rolls

If you grew up in a Russian or Ukrainian household, chances are you’ve seen a tray of delicate rolled pastries filled with a sweet cream sitting on the dessert table. Known as Trubaschkis or Trubochki, these are very nostalgic for me personally it is often served at weddings, holidays, birthdays, and family gatherings.

These delicate desserts are incredibly easy to prepare using premade pastry dough and a homemade cream cheese filling. This recipe was passed on from my generation to generation and is very dearly to my heart. You will be surprised how quick and easy it is to make and so customizable with different fillings.

What Are Trubaschkis?

The word “Trubochki” translates to “little tubes” referring to the rolled shape of the pastries. These are often compared to cannoli because of their tube shape and creamy center. They are commonly filled with:

  • Dulce de leche cream
  • Cream cheese frosting
  • Whipped cream mixture

Ingredients You’ll Need:

  • Pastry sheets
  • Cream cheese
  • Vanilla sugar
  • Whipping cream
  • Icing sugar
  • 14-28 cream horn molds

Instructions: How to Make Trubaschkis

  • Preheat oven to 375F.
  • Defrost 2 sheets of pastry dough and cut vertically into thin strips.
  • Lightly water each strip of pastry dough and roll onto cream horn molds.
  • Brush with egg yolk and sprinkle with sugar crystals if desired.
  • Bake Trubaschkis in a preheated oven for 15 minutes until golden brown.
  • Let Trubaschiks cool down before removing them from the molds.

Make the Cream Filling:

  • In a large mixing bowl whip the whipping cream until stiff peaks form.
  • Use a separate mixing bowl and beat cream cheese, icing sugar, and vanilla sugar until creamy and smooth.
  • Now combine the whipped whipping cream and transfer into a piping bag.
  • Once the Trubaschkis have cooled and have been removed from the molds, fill each roll with prepared cream cheese mixture. Dust with icing sugar and enjoy!

Notes

This recipe will make 28 Rolls, I usually cut the recipe in half.
