Garlic Parmesan Chicken Skewers

This delicious, juicy, Garlic Parmesan Chicken Skewers on the grill or in the air fryer is incredible easy to make. I will show you step by step instructions how to marinate the chicken to make it juicy and flavorful. It’s perfect for a summer meal along a nice salad such us my famous layered taco salad or apple goat cheese salad.
These garlic Parmesan chicken skewers are marinated, grilled (or baked), then brushed with a buttery garlic Parmesan sauce for maximum flavor in every bite.

Ingredient Notes:

- Chicken: You can use either chicken breast or chicken thighs for this recipe. Either one will work great and offer wonderful flavor.
- Olive Oil: This is to coat the chicken not only to keep them juicy and flavorful but also for coating the chicken so the seasoning will stick to it a bit better.
- Lemon: Fresh squeezed lemon is added to this marination for the chicken. It helps to tenderize it and gives it a brighter flavor.
- Seasoning: Salt, pepper, smoked paprika, onion powder, and garlic powder. You can also add italian seasonings.
- Butter: Use your favorite butter for juicy flavor.
- Parmesan: Powdered Parmesan will work best! You can also use pre grated Parmesan.
Instructions to Make the garlic Parmesan chicken skewers:
- Marinate the Chicken: In a large mixing bowl, add cubed chicken. Try to cut the chicken in equal size chunks to ensure they cook evenly. Add olive oil, lemon juice, and spices. Toss well to ensure the chicken is coated well. Marinate for 15 minutes to 4 hours covered with a plastic cling and place the bowl in the fridge.

- Assemble the Skewers: Thread the marinated chicken onto skewers. Lay them flat on a baking sheet.

- Make the Butter Sauce: Melt the butter in a sauce pan on low heat, add the minced garlic and let it simmer for 2 minutes. Set it aside.

- Add the Skewers to the Grill: Preheat the grill on medium/high to 400F. Add the skewers directly to the grates and cook for about 8-10 minutes turning often. Add the Parmesan and fresh parsley if desired or other fresh herbs of choice to the cooled garlic butter.
- Brush the Skewers: Let the skewers sit on the grill for about 2 minutes on each side, rotating and brushing with the garlic Parmesan butter. Once the chicken is golden and reaches 165F internally, take it off the grill.

- Rest and Serve: Let the chicken rest on a a baking sheet and brush generously with leftover garlic Parmesan butter and a squeeze of lemon before serving. Sprinkle extra Parmesan on top and serve warm. Enjoy!

Notes
- For the best garlic parmesan chicken skewers, don’t overcook the chicken! Be sure to check the internal temperature of the chicken it should not exceed 165F.
- If air frying the Skewers, you may need to cut the skewers in size to fit in the air fryer. You can also omit the skewers and just pop them into the air fryer. Set temp on 350F for 10-12 minutes. Brush them once or twice with butter throughout cooking.
- Bake chicken skewers in the oven on 350F on a rimmed baking sheet for about 15-18 minutes. Turning often.
