This Loaded Baked Nachos is the ultimate crowd-pleasing appetizer, perfect for game day, family movie nights, potlucks, or casual gatherings. I love to make this dish when my toddler goes to bed and I can finally get some quality time with my husband. We love to have a huge loaded Baked Nachos plate or charcuterie board and connect.

Crispy tortilla chips layered with seasoned beef, melted cheese, fresh vegetables, and your favorite toppings create a delicious combination of flavors and textures that everyone loves. It reminds me of Mexican food where it’s slightly spicy if you add jalapenos, corn and black beans. Ingredients You’ll Need:

  • 1 large bag tortilla chips
  • 1 lb lean ground beef
  • 2 cups shredded cheese (Gouda)
  • 1 tomato, diced
  • 1 Jalapeno, sliced
  • 1/2 red onion, finley diced
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup red bell peppers, chopped
  • 1/2 cup fresh parsley, chopped
  • 2 cups salsa
  • 1/2 cup sour cream
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 Tbsp taco seasoning

Instructions:

  • Prepare the Meat: Preheat your oven to 400F (200C). In a large skillet over medium heat, cook the ground beef until browned. Then seasoned it with salt, black pepper, onion powder, garlic powder, and smoked paprika. Simmer for 10 minutes.
  • Assemble the Nachos: Spread the tortilla chips on a large baking sheet or oven-safe platter. Top with seasoned beef and shredded cheese.
  • Bake: Bake for 15-20 minutes or until the cheese is melted and bubbly.
  • Add Fresh Toppings: Remove from the oven and immediately top with black beans, corn, diced tomatoes, red onion, jalapenos, bell peppers, and parsley. Serve with sour cream and salsa. Try out my favorite Guacamole recipe and pair it with cilantro, and lime wedges.
